Cinco de Mayo Meal

Anybody going to incorporate some delicious Mexican food in their menu this weekend?  Cinco de Mayo is a perfect excuse!  😉

Here’s some Mexican dishes you may enjoy:

Authentic Refried Beans

Mexican Rice

Crockpot Enchiladas

Turkey Tacos

Southwestern Black Bean Quinoa Salad

And one of my favorite sides:  GUACAMOLE  (Or as my kids call it:  Rockamole)!

Ingredients for Michelle’s Guacamole:

  • 2 avocados
  • 2-3 key limes (or one regular lime)
  • 1/4 cup cilantro
  • salt to taste

Scoop out all the good stuff from avocados.  Finely chop cilantro.  Mix together in a bowl.  Squeeze the juice from the key limes and remove any seeds.  Mix into the avocados and add salt to taste.  Simple and fresh!

For a few guacamole variations add one or more of the following:

  •  finely chopped red onion
  •  minced garlic, 
  •  chopped tomatoes
  • a little sour cream or Crema Mexicana

  (Or just mix avocados with fresh salsa if you want a REALLY easy guac recipe!) Enjoy your Cinco de Mayo!!!!!
