Crockpot Apple Pie Steel-Cut Oatmeal

It’s Recipe Wednesday!  Here’s another easy breakfast recipe:  Crockpot Apple Pie Steel-Cut Oatmeal! Get it set before you go to bed and sleep all night to the delicious aroma of apple pie!  Then wake up and serve!  It doesn’t get much easier than that!

Ingredients:

  • 2 cups dry steel-cut oats
  • 1 quart home-made apple pie filling (or 3 fresh apples peeled and chopped with 1 tsp apple pie spice)
  • 1/2 cup coconut milk (or half-n-half if dairy isn’t an issue)
  • 8 cups water
  • 1 tsp almond extract

Mix all the ingredients except the almond extract in the crockpot and stir.  Set crockpot on low before you go to bed.   8-9 hours later this is what you get:

Stir in the almond extract before serving.  Add any extra sweetener, raisins, or chopped nuts to individual servings if you like.  It was sweet enough for us as it is.  {Note:  this is a little on the runnier side of oatmeal.  Cut back a little on the water if you like it a little thicker and less runny.}

Enjoy having dessert for breakfast!

  1. First this makes me definitely want to get a smaller crock pot (as we just have a large one, but I have been meaning to get a smaller one). That would really cut down on our time in the morning. My husband loves his steel cut oats and I have recently started joining him. I’m going to show him this recipe and we will have to try it- thank you!
