Freezer Cooking- Meatballs

Every week I try to put one or two things in the freezer for quick, easy meals later.  I’ve been a little off lately, but I did manage to make a huge batch of meatballs this week.  We use meatballs in lots of dishes…Spaghetti, Meatball Subs and Sweet and Sour Meatballs are favorites!

My Meatballs (one batch…I made 5 batches at once)

1 pound ground meat ( I use game meat because the hubby is a hunter and we’re used to it)

1 cup oatmeal

2 eggs

1/2 cup onion ( I used dried this time)

1/2 cup milk

salt and pepper to taste

1 t soy sauce

Mix all ingredients together until well blended.

(this is just before I added the meat)

My recipie is nothing special…you could really use any meatball recipie you love…just make lots and freeze them! 

At this point I have a HUGE bowl of meat mixture.

I form them into ball shapes and put them on a lightly greased cookie sheet.  I broil on high for 5-7 minutes each side and then bake at 375 for another 10-15 minutes, or until fully cooked.

I let them cool on the counter for a few minutes, and then put the whole cookie sheet into the freezer ( I have a big freezer, you may have to adapt this step).

When they are completely frozen, I put them into freezer safe bags and have easy meals, ready to go!  I have enough meatballs to use for six or seven meals!
