Cake Mix- DIY

Last week, I was trying to make a cake (yes, the cake that I fed my kids for breakfast) and I realized I was out of cake mix.  I know how to make cake from scratch…it’s just that I really, really like those little boxes that take two minutes, two ingredients, done.  So...I thought…I could totally make those on my own!

Here’s the recipe I used, but I am certain you could use almost any cake recipe you love!

Chocolate Cake Mix 

  • 3 cups of flour,
  • 2 cups of sugar
  • 8 tablespoons of cocoa
  • 2 teaspoons of baking soda
  • 2 teaspoons of salt

Mix and add to a plastic bag.  I made up several bags so I would have them next time I was in a cake making mood.

Label the outside with the wet ingredients needed

  • 2 cups of cold water
  • 2 teaspoons of vanilla
  • 2 tablespoons of vinegar
  • 3/4 cup of oil

(Yep, NO eggs!)

You will want to use a 9 x 11 pan or two smaller ones.  Bake at 375 degrees for 25-30 minutes.

  1. Hi there! Thanks for the recipe. If I use cake flour, do you know if I would need more/less or the same amount? I’m surprised to see no eggs in the recipe. Can’t wait to try it! Could do up a whole bunch and keep them in the freezer. :)

    • I don’t know about the cake flour? I just use reg. white flour. Sorry:) I was suprised at no eggs too…but it works great! Esp. if you’re out of eggs, like I always seem to be!

    • If you look on the cake flour box it should say what the ratio is for Regular flour to cake flour. Not sure if you’ve seen it yet. HTH!

  2. I have used this recipe for the past 40 plus years. Everyone I make it for always asks for my mayonaise cake recipe and can’t believe that it has no mayonaise in it. I have always called it my Wacky cake. Great raves from any one who eats it because of the moistness.

  3. great tips. Re: cake flour vs. regular flour – correct use the same amount. The only difference between the two is that cake flour contains cornstarch and is make it or break it because it must be sifted at least 5 times. I do this with bulk soup mixes too.

  4. This looks great. Can’t wait to try it. Also, my nephew is allergic to eggs so when we have a family get-together, I make him an eggless cake (always vanilla) so I think he will be happy I found your chocolate cake!!!

  5. Great idea! Thanks for sharing. I always like having cake mixes on hand for emergency cake cravings and school/husband work needs and so much prefer to just make things myself rather than buy them.

  6. If I leave out the cocoa does that make a difference if I just want plain cake? is there something else that should be added in place of the cocoa? I’m wondering if I want a Spice cake if I should just add the cinnamon, ground cloves, nutmeg and allspice and that would work? Your thoughts?

  8. I have used this recipe in the past for cupcakes for my Girl Scout troop (one girl with an egg allergy, another girl with peanut allergy, so I had to be careful of mixes). They are the most moist cupcakes that I now use it as my go to recipe! Delicious!

  9. Great idea! I love homemade! However, is there a non chocolate recipe? I am not normal, I guess, I dont really LOVE chocolate!

    • Me either, BrendLee! I was hoping someone had tried and loved a non-chocolate version as well! I have searched but I just don’t see anything very promising AND SIMPLE!

  11. This cake is well loved in our house. My daughter uses this whenever she needs a quick snack for youth group at church. It is a favorite there too. So easy and fast that tomorrow I will be sitting down and making more, we ran out!

  12. found your recipe on pintrest and just made a fresh batch. i think we are going to use this for my parents 50 wedding anniversary. i make cupcakes out of it they did not need to bake as long and it took about the same amount of time as putting a box cake together i am so happy because my daughter and other family members have a lot of allergies and with this recipe most of them can have it thank so much :) oh and it taste awesome
